Fragrant Spinach & Mango Salad

    For the salad

    • 150g young leaf spinach
    • 50g beansprouts
    • A large handful of fresh mint leaves, roughly torn
    • A large handful of fresh coriander leaves, roughly torn
    • 1 mango, peeled and sliced

    For the dressing

    • 1 red chilli, de-seeded and roughly chopped
    • A small handful of macadamia nuts
    • Juice of 2 limes
    • 3 tbsp toasted sesame oil
    • 1 tbsp agave or 2 tsp honey
    • 1 tbsp fish sauce (nam pla)



    1. Add the mango, lime juice and zest to a food processor and process until smooth.

    2. Spoon into 4 glasses top with the coconut yogurt and serve with Arden’s Nutty Nibbles with Dark Chocolate Chips
