Fragrant Spinach & Mango Salad

Serves 4


150g young leaf spinach
50g beansprouts
A large handful of fresh mint leaves, roughly torn
A large handful of fresh coriander leaves, roughly torn
1 mango, peeled and sliced

1 red chilli, de-seeded and roughly chopped
A small handful of macadamia nuts
Juice of 2 limes
3 tbsp toasted sesame oil
1 tbsp agave or 2 tsp honey
1 tbsp fish sauce (nam pla)


1. Place all of the salad ingredients on a serving dish and mix gently.

2. Place the dressing ingredients in a food processor or blender and whizz until smooth.

3. Serve the salad with the dressing drizzled over.
