Our long-established recipes demand that panettone is made exclusively using natural sourdough, commonly known as Mother Dough. Which is a fermented dough made from water and wheat flour. Our Mother Dough is a live organism that has been reproducing itself since the 1960’s, and it is worked daily by our Amici’s confectioners, following a very complex and delicate process.
New easter Mini Colomba
Italy’s Easter counterpart to panettone is the Colomba, a dove‑shaped sweet bread topped with pearl sugar and ground hazelnuts.
Taking more than 24 hours to create each cake, Colomba has a fascinating origin story. The name derives from the Italian words for Easter Dove, “Colomba di Pasqua”, a sign of peace for much of the world, and this is also where Colomba gets its shape.
Our Amici create Italian Mini Colomba with 100% butter, and bake it according to a traditional recipe, with a naturally leavened mother dough that has been nurtured since 1964.
